Honest answer: partly. Stunlock Studios never shipped a macOS build, so on a Mac you are running the Windows version through a compatibility layer - and there is a real limitation you should know before you buy anything.
Single-player and private servers work. Official multiplayer protected by kernel-level anti-cheat does not - that is a macOS restriction, not something Hrava can engineer around. If V Rising to you means official PvP servers, no compatibility layer on any Mac will give you that today.
Cloud gaming needs no compatibility layer, but you are renting forever and playing a compressed video feed. A local layer costs once and keeps working offline. See the full comparison.
Online servers run through EAC; official multiplayer is blocked. Kernel-level anti-cheat - EAC, Vanguard, BattlEye, nProtect - does not work on macOS in any solution (not Hrava, not CrossOver, not virtual machines): it is a limitation of the platform itself. If all you need is the protected online mode of V Rising - it will not launch on Mac. Single-player and unprotected modes work fine.
